Meet the most delicious pea protein pancake mix: Chocolate Love. This mix is gluten-free, vegan, refined sugar-free (and damn good). Chocolate Love Pea Protein Mix has been developed in collaboration with Nashness healthy snack company. If you haven't tried it out yet - highly recommend it!
Here is how I made the two most delicious pancake stack:
Ingredients:
- 1 small cup of Chocolate Love Mix
- 1 Tbsp of melted coconut oil
- 3/4 cup of Plant milk (almond/ oat)
- 1/4 cup of water
Method:
- Mix all the ingredients together in a bowl until completely combined. this mix is a lot thicker than your usual mix.
- Add a tbsp of water if you would like to the thin-out the batter further if required.
- If making these with choc-chip, stir in a small handful of dark choc chips. or add in blueberries.
- Pre-heat a non-stick pan over medium heat. I used a small amount of coconut oil for frying too. Spoon in three dollops of batter, frying lightly. Flip once small bubbles appear on the surface of the batter. Plant-based pancakes require a little more patience so keep the heat to a medium level.
Option 1: Cashew Cream
I spread thick cashew cream in between each layer of the stack for the most decadent treat. Top with fresh pomegranate seeds for a fruity flavour. I have a great cashew cream recipe in the Good Meal Guidebook.
Option 2: Choc Chips
Throw in a handful of dark chocolate chips into the batter. Yum.
